Inside out carrot cake muffin
Are you guys on Pinterest? If you’re not, you should be! It’s a newer site where you ‘pin’ pictures that you like onto ‘boards’ that you’ve created. The site really has something for everyone. I’ve been using it for a few months now and I love finding new recipes to test out.
About a month ago these inside out carrot cake muffins were being pinned like crazy and I knew I would have to make them. I happened to have some carrots on hand this weekend and decided to try it out finally.
I doubled the recipe because I had a feeling they were going to be yummy. And I was right. These muffins are flavorful and the inside is creamy and sweet. If you have a craving for carrot cake but don’t want to deal with the muss and fuss that comes with making a whole cake… this is a definite must-try!
