Can you believe that we are already out of November? Thanksgiving seemed to fly right by. We had a pretty low key dinner this year, followed by a ridiculous marathon shopping session with my best good pal. It was a great day. My favorite part was not having to cook anything. Thankfully, my mother still hosts Thanksgiving for our family and we’re only expected to bring a pie or appetizer, something simple. Despite my parents having a rather large kitchen, space is pretty limited on holidays so I looked for super easy holiday appetizers.
A few days before Thanksgiving my mom sent me a list of things I needed to buy, because if she’s cooking we should at least foot some of the bill. Such great children we are. 😉 Anyway, I dropped by Walmart and while shopping I saw Rich’s SeaPak Shrimp Spring Rolls and thought they would be a nice addition to our holiday meal.  In past years, we always had this weird crab concoction but it didn’t make the menu this year. These spring rolls were the perfect replacement, with way less work.
And they were totally under $10 for a pack of 16. I didn’t want to get too much of any one thing, considering the counters and tables were all covered in dishes that people brought over. I mentioned our Thanksgiving was low-key, but we still had around 25 guests and they all brought food. Plus my mother threw down and made a billion different things. The spring rolls were a nice change of pace.
They do come with a dipping sauce which some people thought was too spicy and others thought it was perfect. I did grab some sweet and sour sauce, which is usually a crowd pleaser. You can either bake or fry the spring rolls, I baked them. Fire terrifies me and I’m no good with oil. Baking is always the healthier route, anyway.
They disappeared off of the plate about as quickly as I put them there. Actually, while I was snapping pictures of one end of the plate, they were being eaten off of the other. These would definitely be a really easy dish to bring to any holiday parties. I know my family will be throwing a Christmas party in a few weeks and I’m sure these or another variety of Rich’s SeaPak appetizers will be making an appearance.

My son just discovered spring rolls on a chinese buffet so I think I’ll try these out on him, but I’ll probably go with a sweet and sour sauce like you. My dad cooks Thanksgiving for about 25 as well and we all pitch in. I’ll have to remember this around Christmas time. The meal is more low key and we actually get to bring a dish! #client
