Getting Full Without Getting Fat with Lean Cuisine and Skinny Cow

It’s February, which means two things: we’re all trying to get skinny, but instead we’re getting sick. Well, it wouldn’t be winter without massive amounts of germs and a constant battle of will power, now would it?

So, the other day when Mother Nature was having a hot flash and thought it was good idea to make it 60 degrees in January, I packed up the family and headed to Sam’s Club for some goodies. Because it was so nice we also went to lunch, and bought the kids new shoes, and just made a day of it. Of course, the next day it was like 2 degrees outside and the extreme temperature switch meant bad news.

Now, three days later, all four of us are dripping, congested, mouth-breathers. The man of the house is acting like he has pneumonia (when it’s really just a head cold) and I’m stuck ignoring my own aches and pains while taking care of my three two babies.

Luckily, when we were at Sam’s Club the other day, I made sure to pick up a bunch of Lean Cuisine’s, Skinny Cow Ice Cream, and fresh veggies because I hardly have the energy to find something healthy and nutritious to eat while I’m running around wiping noses and rocking babies.

Did I mention it was all on sale? For January and February the Asian Flavored Lean Cuisine 6-pack is $9.98 (was $11.25). The Italian Favorites 4-Pack is $6.98 (was $7.98) and the Skinny Cow are only $8.98 (was $9.98). Hello, total steal. And a way better bargain than buying them on sale at a regular grocery store.

The Lean Cuisine’s and my asian infused asparagus as a side dish have been keeping my belly full without me having to put in much effort. And the Skinny Cow Ice Cream Sandwiches have been a nice cool treat to soothe my scratchy throat. So, I’ve had no issues sticking to my healthy diet and feeling full even with a sick family to attend to.

My family loves their veggies but I find myself wanting to try something other than normal steamed veggies so I decided to try a quick and easy asian flavored asparagus recipe to go with my Asian Flavor Lean Cuisine.

It’s so simple, seriously. All you need is a pan with hot oil, some soy sauce, and some asian seasonings. I found this HUGE Simply Asia Seasoning mix at Sam’s Club for under $4.

It smelled kind of amazing when I combined the two.

And I love that the asparagus cooks so fast. It probably took about 10 minutes from beginning to end.

So the ginger and garlic seasoned asparagus went lovely with the ginger garlic stir-fry with chicken Lean Cuisine. And the asparagus doesn’t add many calories to the meal.

And I had just enough room left over for one of these little lovelies. These Skinny Cow Ice Cream Sandwiches are seriously SO good. And I really can’t tell that they are low-fat. They taste amazing and for 150 calories, why not have one? 😉

Easy Asian Asparagus

Ingredients:
8-12 Asparagus Stalks
1 Tablespoon Olive Oil
1 Tablespoon of Soy Sauce (your choice, I love the low sodium stuff!)
1 Teaspoon Simply Asia Ginger Garlic Seasoning Mix
 
Instructions:
Wash off your asparagus and snap off the tougher end (the last inch or so of each stalk). Heat oil, over medium-heat, in sauté pan. Line the asparagus up in the pan and cook until tender, about 6-8 minutes. Meanwhile, combine soy sauce and seasoning in small bowl. About a minute before removing the asparagus, brush the sauce mixture over the asparagus in the pan. Make sure to move the asparagus around frequently so the soy sauce doesn’t coagulate at the bottom of the pan. Serve immediately.
